It sounds Jamaican, Mon - but we are told these beautifully colored beans originated in Africa.
The Calypso Bean (Phaseolus Vulgaris) is a dramatic and beautiful bean. It is also called Ying Yang and Orca bean because of the stark contrast of black and white that flows along the bean's length. About 3/8 inch long with a silky smooth texture and mild flavor, this bean is sure to look great on any plate!
Calypso Beans are a delicious potato-like flavor addition to pasta salads, soups casseroles and stews. Cooked Calypsos combined with cooked rice make a wonderful stuffing vegetables.
With the coloring - you would think this would be a "Pinto" bean - looks like Little Joe's horse on the old Bonanza TV shows...
