Snow Cap Beans - look like the Sierra in winter!
Snowcap have that interesting coloring and it holds up during cooking, so it makes for use in view foods, like salad, and clearer soups and stews.
We use them in our chili making operation and especially when preparing custom chili for hunters who want some venison or elk meat made into a flavorful chili for cold winter nights by the fire!
We now have enough seeds to plant and harvest in better quantities and commercial brokers are always asking for them because they can't find the quality or size in genetically altered beans.
Southern cooks do all kinds of exciting things with them - we usually replace all the cooking water with low sodium all natural stock or base and add a few simple veggies - but you could add some meats as well.
