Originally from Chile or Argentina these beans have a wonderfully rich flavor and smooth texture. The skins of the Tiger Eye Bean is so tender they almost disappear when cooked. They are great for chili or re-fried beans and can also be used as fresh shell beans.
We use Tiger Eye in one of our chili formulations and it is a lovely bean to cook with. Great flavor, wonderful coloring, and breaks down to a soft, almost re-fried-like paste if you want it to. We like whole beans in our chili, but putting them in a blender and adding tomatoes, onion, garlic and/or cilantro creates a flavorful dip for bread and veggie chips even the kids will eat!
A lot of our friends from India are partial to the Tiger Eye Beans - remind them of a bean grown at home - at a great value!
Also, can be used in salads as a whole bean, but chill the beans in iced water to stop the cooking process when they are ready.
