1 lb of Chili Smith Green Black-eye Beans
rinse & cook with plenty of water to al dente stage (just soft)
Time= 20 to 30 minutes
1 box of Chicken Stock (low or no sodium)
3 Tbl of tomato paste
1 sm onion diced
1 bell pepper diced
1 jalapeno diced
1 clove of garlic diced
salt and pepper to taste
cook approximately 20 minutes
add 3 or 4 slices of crumbled crispy bacon, and turn off the heat. Do not cook to soft, just let it stand. Peas will continue to cook and absorb liquid. Taste for doneness and seasoning.
You can also wait to add the bacon til you are ready to serve.
Serve over hot cooked rice or corn bread
Great make ahead dish. Just heat up when ready to serve
Total cooking time is 45 minutes to 1 hour.
Do not over cook!!!
