“You gotta love a bean with this name!A Goat’s eyes come from the unique coloration on the skin and these are a favorite from Baja California in Mexico. We use this in our chili because the skin stays intact but the bite is soft like aA re-friedA with Pinto beans. Really tasty.
A mediumA size bean with great flavor and looks great too. We like it with some diced tomatoes – heirloom, of course – onion, garlic, and a little vegetable or chicken stock. Excellent forA Hummus or making Re-fried BeansA for a dip.
