Eye of the Goat "Ojo de la Cabra"
You gotta love a bean with this name! Goat's eyes come from the unique coloration on the skin and these are a favorite from Baja California in Mexico. We use this in our chili because the skin stays intact but the bite is soft like a re-fried with Pinto beans. Really tasty.
A medium size bean with great flavor and looks great too. We like it with some diced tomatoes - heirloom, of course - onion, garlic, and a little vegetable or chicken stock. Excellent for Hummus or making Re-fried Beans for a dip.
