A relative to the Appaloosa bean – no horsing around here…. – the Painted Pony is lovely to look at, has a nutty, delicate flavor and the skins and colors hold through cooking. Used in salads and as side dishes, it is a favorite of many home-growers and cooks in the American South.
Try them with bacon (real or veggie), onion, garlic, and greens with some good organic stock – YUMMY!
