Originally from Chile or Argentina, these beans have a wonderfully rich flavor and smooth texture. The skins of the Tiger Eye Bean is so tender they almost disappear when cooked. They are great for chili or refried beans and can also be used as fresh shell beans. We use Tiger Eye in one of our chili formulations and it is a lovely bean to cook with. Great flavor, wonderful coloring, and breaks down to a soft, almost re-fried-like paste if you want it to. We like whole beans in our chili, but putting them in a blender and adding tomatoes, onion, garlic and/or cilantro creates a flavorful dip for bread and veggie chips even the kids will eat!
